Ingrediants for Soup: Serve Cold or Lightly warmed.
4 large Leeks cleaned and chopped
I small onion finely chopped
2 medium potatoes peeled and chopped 2 oz butter [ 50 g ] 1 tablespoon of floor
1 1/2 pints of chicken stock [ 850 ml ]
10 fl oz of semi skimmed milk [ 275 ml ]
Cooking:
Add all of the ingrediants to a frying pan and saute for 15 minutes add a tablespoon of floor to thicken slowly add the chicken stock and bring to boil simmer for 20 minutes at low heat
add the milk slowly and simmer for a further 20 minutes Allow to cool Add the soup to a liquidiser and blend to a fine sauce Chill in the fridge until ready to serve
Serving: Serve Soup in bowls Add garnish or croutons if required
